3/4 c Ketchup 1 tb Worcestershire sauce 1/2 c Cider vinegar 1
Rack of pork ribs, about 4 2 tb Hot sauce -pounds 1 md Onion,
grated This is a pretty typical US 3 Garlic cloves, minced -BBQ
treatment. Combine the ketchup, vinegar, hot sauce, onion,
garlic and Worcestershire sauce in a mixing bowl and stir until
blended. Pour half of the sauce into a glass baking dish large
enough to hold the ribs in a single layer. Place the ribs meaty
side down in the sauce. Pour remaining sauce over; cover and
refrigerate for 12 to 24 hours. Heat a charcoal grill until the
coals are thickly coated with ash. If you are using a gas grill,
preheat on low for 5 minutes with the lid closed. Place the ribs
on a rack set at least 6 inches from the fire. Grill slowly, for
15 minutes. Turn and baste with sauce. Ribs should have browned
slightly. If they still look raw, stoke the fire. If they have
browned a great deal or scorched in spots, move ribs to a cooler
part of the fire. Cook for 15 minutes, baste, and turn again.
Grill for 30 to 45 minutes longer, turning and basting, every 5
minutes. Watch the fire carefully, keeping flames away from the
ribs. To serve, slice the rack into individual ribs and pile on
a heated platter. Serves 4.

If you are a teenager, or have a teen in your family, let me say that teens should build their own computers. Frequently, I have been asked if a 14 or 15 year old should attempt such a project. The question is born sometimes of doubt, and sometimes simply of a lack of knowledge concerning the steps involved.

It is right to wonder, particularly if your basement is littered with the debris of unfinished projects of other sorts. A sum of money does have to be invested, along with time, and discipline.

Interest in technology must be encouraged in youth, and not just the benefits of having it. Young people should learn how things work, or else we will become a country forever indebted to a small, elite group who can understand such things. We should never be so dependent.

If for no other reason, teens should build a computer for this: nothing that goes wrong with a computer will ever faze them again. As I have said in other articles, they will become the masters of the machine, rather than having things the other way around.

There is far more to be gained than just this sense of confidence. Building a computer provides a feeling of accomplishment that carries over into all areas of life. Once a challenge like this has been successfully completed, the same hard work and discipline that brought success can be applied anywhere. It becomes a foundation for achievement.

Let me tell you a secret.

Things don’t always go the way we want them to.

Let me tell you another secret.

We don’t always hear what we want to hear.

Duh.

These two statements are hardly secrets; we all know they are true. If they aren’t secrets, then why do we act surprised when it happens? And worse, why does the surprise often turn to pouting?

Adult Pouting

Most adults don’t walk around with a pout on their face, but that doesn’t mean they aren’t pouting. Pouting is when we are having an internal pity party because we haven’t gotten what we wanted, things haven’t gone the way we’d hoped they might, we heard something we didn’t want to hear or disagree with, or we have to work on something when we would rather be doing something else.

So we pout.

Some Examples

We are called to a meeting, when we wanted to be working on the important project on our desk. We think things like, “I don’t need to be at this meeting. Tammy could have handled it. Why am I here? Can’t they see that my time could be better utilized elsewhere? This is ridiculous.”

Or we aren’t asked to go to the meeting and we see ourselves as really being able to contribute (or really wanting to be there because it is about an important change that we want to be in-the-know about). We think, “Why can’t I be there? My experience would make a difference. Besides, this could have been my chance to shine for the new VP over in Marketing. Being there would be a much better use of my time than working on these numbers. This is ridiculous.”

Or we sit in the airport because of a delay. We sit and we sit. We miss our connection because of the delay. We miss the events we had planned for the evening. And we are still in Buffalo (or wherever). We think about what we are missing. We think about the stupid airlines or the stupid weather or the stupid travel agent that booked this itinerary.

Poor us.

In all of these cases (and a hundred others I could share) we keep our thoughts inside ourselves. We are so busy with our own internal conversation about us, that we miss any chance to benefit from the situation. In order to capitalize on any experience we have to be present for it. When we are pouting, we clearly aren’t present in the situation or experience. We are too busy focusing on ourselves.

It is time to get over ourselves. Lose the pout and get yourself out(side) of your self.

We can become much better leaders and professionals we can get past our internal language and live in the present moment. The present offers us:

• Opportunities to learn

• Opportunities to teach

• Opportunities to reinforce positive behaviors in others

• Opportunities to see our world in new ways

• Opportunities to enjoy our day more fully

Staying in pouting mode closes the door to all of these opportunities because we don’t see them -we are too busy thinking about ourselves.

Getting the Pout Out

To capture the opportunities in the present we have to “Get the Pout Out,” here are some ways to do that:

Acknowledge your feelings and move on. Give yourself permission to feel bad for yourself. You have one minute, starting now. Then let it go, get on with life and the situation you are in.

Hear the opportunity knocking. Remind yourself of the opportunities you will find in the situation, even if this isn’t where you would prefer to be. Have you ever gone somewhere you didn’t want to go and were surprised how much fun you had? That can happen again, right now, but only if start looking for it.

Listen more completely. One of the best ways to become more present is to listen more carefully to those around you. Pay closer attention in the meeting. Listen for ideas and perspectives that interest you.

Observe more closely. You never know what you might miss. You never know what you will learn.

As a leader you have a responsibility to be present. People look to you for direction, ideas, and a good example. Staying present, even in tough or challenging situations is a great example to set.

More importantly though, as an individual, striving to reach your own potential, moving past the pouting moments give us a chance to fully live our lives. This habit allows us to find enjoyment, growth, and better relationships in situations that might not have seemed that favorable at the start.

Class: It Tells All

The word class, used by handicapper is no abstraction. The entire structure of thoroughbred racing is based on the differences in class between animals.

In stakes races, for instance, apart from the penalties for prior wins, all entrants carry the same weight.

In handicaps’ anyone who’s willing to pay the required fees and enters a horse can have the tracks handicapper assigns the weights for the race so as to ensure a real contest.

In allowance races the weights are assigned directly by the conditions of the race itself, not by the tracks handicapper.

The animal with the best prior record in the recent races will carry the most weight with graduation’s down to the lightest weight to be carried by the horses of less impressive records.

Just as differences in class are part of the structure of racing, so is the ability to recognize differences between individual horses in point of basic class.

This is an absolutely essential part of the equipment of every handicapper who attempts to pick winners.

It is a very simple matter of avoiding extremely cheap horses, the $5,000 claimers that clutter up racecourses to the boredom of handicappers everywhere should usually be avoided.

Many of these cheap horses are unsound, some are old and almost as unreliable as the cripples, others are simply no good, never could race well and never will race well.

And yet strangely enough these aged horses seemed to have a fatal attraction for players.

Even handicappers with the most basic knowledge of racing cannot fail to recognize that them for what they are in to avoid them like a plague.

Horses of class run truer to form. With the on line and off track wagering facilities available these days there’s no reason not to concentrate on the quality racing.

My handicapping is much more consistent when I play the major race tracks.

Belmont and Aqueduct are consistent favorites of mine. Santa Anita and Hollywood Park are also profitable to handicap.

If you concentrate on the better horses there consistency, in easily determined class will give you a definite advantage. Horse racing is a game of slight variances.

Even a mortal lock can have the jockey fall off, or stumble leaving the gate and get beaten by a lesser animal.

In the last analysis, all practitioners of the gentle art of handicapping fall within one or the other of two groups.

The first group is made up of those who attempted analysis in terms of the comparative class and consistency of the individual entrants in each field.

The second group is made up of those who rely primarily upon a process of speed analysis in attempting to get their winners.

Between these two schools of handicapping there has been much spirited debate.

Class is a valuable instrument to any handicapper. How it is best evaluated and measured in any single horse is the dilemma that confronts the serious horse player.

There is a common misconception that you have to starve yourself to lose weight. This is simply not true! On the contrary, you must eat to lose weight. It is the Glycemic index that can help you determine what happens in your body. Let me explain.

Your body needs glucose, which is a form of sugar, and is the main fuel for the body. The body is constantly trying to maintain blood sugar levels and it is the carbohydrates we eat that turns into glucose which goes directly into the blood stream to feed all the cells of the body. Glucose is the only fuel your brain uses and it is the brain that uses more energy than any other part of your body. If your blood sugar goes down, it starves the brain and a wide variety of symptoms can occur such as feeling weak and sluggish, drowsy, dizzy, confused, headache, irritability, trembling, rapid heart beat, and even anxiety and panic attacks.

Carbohydrates alone do not make a healthy body. We need a balance of protein, carbohydrates, fat, water and exercise to maintain health. The biggest difficulty that we have with weight problems is over indulging in high glycemic foods. These are the foods that contain too much sugar or foods that are refined carbohydrates. If you over indulge in carbohydrates, (which produce insulin) then the excess glucose gets stored as fat. You can counter that by eating protein with it, (which produces glucagons). Glucagons promote the utilization of fat to be used for energy. Insulin and glucagons in balance maintain normal blood sugar levels. A body in a high insulin state promotes excess stored fat and disease.

The foods that are high on the glycemic index are foods such as the root family, potatoes, carrots, parsnips, rutabaga, yams etc. If you want to eat potatoes then I’d opt for the yams or sweet potato (without the honey and brown sugar). They are the lowest on the glycemic scale. Also rice, pasta, corn, most breads are high on the scale as well as some fruits like bananas, apricots and pineapple.

Some low index foods are vegetables such as broccoli, the lettuce and cabbage family, various beans, dairy and soy.

I would also like to make a mention about fat. Fat in it self is not the bad guy. Our diets require fat to remain healthy. Fat provides fuel for the body plus it helps in the development of cell membranes and hormones and also helps to insulate our bodies. Fat in our foods is what gives us that satisfied feeling. You don’t need very much fat intake. Stick with good fats like olive oil and stay away from saturated or trans fats.

Portion size is very important. The rule to remember is; if you have approximately 3 oz. of protein and you have a high index carb. then eat only 3oz of that carb. It is a one to one ratio. A protein and a low index carb. would be 3 oz of protein and 6 oz of carb. It is a 1 to 2 ratio.

If you eat 6 small meals per day in the correct ratio then you should easily be able to lose weight.

The holidays bring with them thoughts of carving and serving delicious turkey dinners to your family and friends. Tradition has its fans, but perhaps this year you’d like to try a twist to your turkey recipe. If you have a gas grill and enjoy the smoky flavor of grilled meats, why not try grilling your turkey this year? It’s not only possible, it is rather simple. And it delivers a delicious flavored bird to your table. Plus, having the turkey on the grill instead of the oven leaves you with all the room you need to prepare the rest of your dinner in less time.

When you are ready to buy your turkey, the first thing to consider is the size of your grill. You don’t want a bird that is so enormous that it can’t fit on the grill rack. Ideally, the turkey you select should sit on the grill and the lid should close without touching the bird. If this isn’t possible, don’t worry, you can still grill your turkey. You’ll need some heavy duty aluminum foil and either a V shaped grill stand or another metal cooking instrument that you can safely use to prop open the lid of the grill.

Prepare and stuff the turkey as you normally would. Place it on the grill so that it is positioned over one burner that you can turn off. Turn that burner off and the other burner or burners on. Since you can’t really “flip” a turkey, you want the turkey to cook by indirect heat, not by a direct flame underneath it.

You get the smoky flavor by using wood chips. If you haven’t used wood chips before, they’re easy to use. You soak them in water so that as they dry out from the heat of the grill, they’ll release a flavored smoke that infuses the turkey. You can purchase a tray that is designed for putting wood chips on the grill or you can make one yourself from heavy duty aluminum foil. Take the wood chips out of the water and put them into your tray. Place the tray on the grill over the lit burner.

Next, close the lid fully if possible. If not possible, prop the lid up just enough to keep it from touching the turkey. Then cover the remainder of the opening with aluminum foil. If heat gets out you will probably have to cook the turkey longer. However, the foil creates enough of a barrier so the smoke is kept circulating inside the grill and flavoring the turkey.

The time required to cook the turkey will vary depending on whether or not you were able to close your grill completely. If you can, it will take less time. If you can’t, you might want to increase the heat on the other burner or burners to try to make up for the lost heat by having to prop open the grill. After a couple of hours, rotate the turkey 180 degrees to help ensure even cooking.

As with any method of cooking poultry, it’s important to make sure that the internal temperature of the meat reaches 160 degrees Fahrenheit. Ideally you should use a meat thermometer to monitor the temperature as you cook. If you don’t have one, then you’ll have to check the readiness by poking the thigh with a fork or skewer. If the juices that run out are clear and the turkey has turned a nice golden-brown color, then you are ready to remove it from the grill. Consider glazing the turkey with a sauce you use on other meats, or possibly adding barbecue sauce to the traditional cranberry sauce as a condiment.
